SCALLOPS

Scallops are available both off the shell and in the half shell, and can be supplied ‘roe-on’ or ‘roe-off’.

They have sweet, rich meat that is medium to firm in texture. Sear on a high heat to create a golden crust without overcooking.

CRAB

PFD can source a range of fresh Blue Swimmer Crabs or Spanner Crabs from around Australia.

Blue Swimmer Crabs have a mild and nutty taste, whilst Spanner Crabs have a white soft flesh and are known for their sweet flavour. Crabs can be steamed, poached, deep-fried, stir-fried, pan-fried, grilled or barbecued.

MUSSELS

The colour of mussel flesh will range from orange-red to creamy white with a slightly rich meaty flavour and taste of the sea.

Mussels are also very versatile and will respond to traditional white wine and cream sauces, Asian or robust Mediterranean sauces.

BUGS

PFD offers two types of bugs, the Balmain Bug and Moreton Bay Bug.

Moreton Bay Bugs have a sweet rich flavour, milder than Balmain Bugs, which have a more ‘fishy’ flavour. Use the shell to flavour stocks, soups and sauces.
